Hybrid gas/wood pizza oven - CLEMENTI Clementino Hybrid
The cooking space is made of 3 cm refractory
stone certified for food use.
Under the refractory stone is placed a 2.5 cm slab of
SCAMOTEK, a calcium silicate material that allows for greater insulation, since
it does not pass the heat down.
This material combined with the refractory stone
ensures that you keep the heat longer and you can cook for longer.
The oven is covered with a 3 cm layer of rock wool,
allowing you to avoid heat loss and the outer structure to heat up too much.
